Pumpkin Fudge Recipe

While pumpkin fudge recipes are not as well known as the chocolate fudges, they are absolutely wonderful year-round.  (And who says we have to wait until the Fall to enjoy this tasty treat?)

Pumpkin fudge recipes make special gifts for those who love sweets, and add a special touch when you need something unique to bring to work, too.  This recipe is quick and easy, as well as tasty.

Pumpkin Fudge Recipe 

• 1 cup milk
• 2 cups granulated sugar
• 1 1/2 cup powdered sugar
• 3 tablespoons light corn syrup
• 1 cup pumpkin 
• Dash salt
• 1/2 tsp. allspice
• 1/2 tsp. cinnamon
• 2 tablespoons butter
• 1 tsp. vanilla extract
• Optional:  1/2 cup coconut, 1/2 cup nuts

Combine first 6 ingredients into saucepan.  Cook over medium heat until bubble begins.  Reduce heat to a simmer.  Cook mixture until it reaches soft ball stage.

Remove from heat, then mix in last 5 ingredients.  Set aside to cool.

Once cooled, beat until mixture is thick (and loses its gloss).  Pour into buttered dish, cutting into small squares once mixture has firmed.
