Asparagus Cheese Casserole

 

Asparagus Cheese Casserole 

3 Tbsp butter
1 Tbsp chopped onion
2 Tbsp flour
1 cup milk
1 cup shredded cheddar cheese
2 cups cooked asparagus
3 well cooked eggs, sliced
1/2 cup buttered bread crumbs
1/2 tsp. salt

Melt butter, then add onion, cooking until tender.  Add flour and blend.  Add milk, cook until thickened.  Add seasoning and cheese, cooking until well blended.  Alternate layers of cooked asparagus and egg slices with sauce in a buttered baking dish.  Top with buttered crumbs.

Bake at 350 for 25 minutes.  Casserole is done when crumb topping is brown and sauce bubbles up through mixture.
